Kaju Barfi – Simple Indian Sweets for Summer‘s End

It has been a while since we prepared some sweets. To make up for lost time, here is a simple recipe for Kaju Katli - Indian sweets that are good for any occasion, step by step.

Ingredients:

1 cup cashews

½ cup sugar

¼ cup water

A little ghee or coconut oil for greasing surface (optional)

Rose petals or saffron (optional)

Process:

Grind cashews to a powder (not oily)

Mix sugar with water and heat up the mixture in a non-sticking pan at low heat.

When the sugar dissolves, add cashews and keep stirring until the mixture starts thickening. It will thicken gradually and become a form of dough in about ten minutes.

Remove from heat and place on the work surface. At this stage it is also possible to add the rose petals or saffron.

By rolling the dough (it will be necessary to use butter paper or silicon layers in between, since the mixture is otherwise a little sticky), reach a thickness of 3 – 5 mm.

When it is completely cool, and not before, cut out in diamond shapes.

Kaju katli can be stored in an air tight container.
